Walnut and Almond Crusted Cod

 This recipe is quick & easy and just so happens to be packed full of good nutrition!

  • 4 cod filets
  • ½ cup almond flour
  • ½ cup ground walnuts (pulse walnuts in a food processor or blender until you have a fine meal)
  • 3 tablespoon olive oil, divided
  • 2 tablespoon parsley, chopped
  • 2 tsp paprika
  • ¼ teaspoon salt
  • 1 lemon, juiced


  • Combine the ground walnuts and almond flour into a shallow bowl. In a separate bowl, combine the olive oil and lemon juice.
  • Pat the cod filets dry and dip into the lemon juice/olive oil mixture followed by the nut flour mixture, making sure the fish is coated all over. Repeat with the rest of the filets.
  • In a medium sized skillet, heat 1 tablespoon olive oil. Once the pan is hot, place the filets in the pan and cook on each side for 2-3 minutes or until cooked through. The cook time will vary depending on the thickness of your fish. To know if your fish is done, it will flake easy and no longer be opaque. Before serving, top with parsley.
