Add the cashews, almonds, oats, salt, and ½ cup of the coconut to a food processor or high speed blender.
Blend or process until you have a fine meal/powder.
Add the dates to the blender or food processor and blend together with the oat and nut mixture. The mixture should start to thicken and look more like cookie dough. You may need to stop and scrape down the sides of the food processor or blender a few times until you get to the cookie dough texture.
Transfer the mixture to a large bowl and add the lime zest from 2 limes, lime juice from 2 limes, and vanilla extract. Mix together until well incorporated.
In a shallow bowl or a large plate, add the remaining ½ cup of coconut and the zest from 1 lime and mix together.
Using a tablespoon or large spoon, scoop out the nut & date mixture and use your hands to roll into balls.
Roll the balls in the coconut & lime zest mixture to coat the outside of the balls.
Repeat with the remaining date & nut mixture and enjoy!
